Although Good ole Grilldog has spent a lot of time in Japan, he knew how to make great rice and sushi long before his adventures. The best rice for Sushi is of course, Japanese rice. American Rice has a lot of preservatives and has been “cleaned” which adds foreign junk to the rice grains. American Rice should be rinsed and drained several times until the water is less cloudy. For both brands of rice, Grilldog recommends, soaking the rice for about a ˝ hour before cooking. Next, put one cup of rice in 1 cup of water and bring to a boil in a tightly covered pan. Then turn fire down to simmer for 10 minutes. Remove from heat and let sit for 10 minutes. Do not remove the lid until the end. Now you have rice.
rice is our main food .. and even I know that it can be made various way .. we too soak it before pressure cooking it .. in fact the way u described .. is the way our grandmothers used to cook it .. that rice is positively more fragrant .. (yes, rice have different smell too, it not only depends on the type of rice .. but way of cooking helps to bring out the flavor too) .. this rice cooking method that gdog said .. makes the rice more fluffy .. or is puffy the right word?? .. it makes them more .. uh .. whats the word .. sprinkling ? .. anyway .. this rice .. u can take just with a touch ofsalt and ghee or butter (ghee and butter are not the same thing) .. and u can easily forget biryanee or poulaw (poulaw is like chicken fried rice, Indian variation, tastes different too, the word poulaw comes from pollanno .. pol = meat, onno = rice) …
we usually cook using pressure cooker becoz then we don’t have too check when its boiling or note the time to keep it in low fire .. we can just put it in the pressure cooker and forget about it till the whistle sounds .. but trust me .. all those few minutes makes all the differences and plays havoc with the taste buds …
