Pineapple fried rice

1 pineapple
4 cups long-grain rice -- jasmine
3 tablespoons vegetable oil
1 small onion -- or scallions
5 cloves garlic -- minced
1 tablespoon ginger -- minced
1 cup Chinese beans, if you don’t have Chinese beans, don’t worry, you can make this recipe without.
1/2 cup tomatoes -- diced
1 cup pineapple -- diced
3 tablespoons fish sauce
1 teaspoon sugar
3 scallion

Serve rice in fresh pineapple. Cut pineapple in half. Hollow out each half. reserving 1 cup of fruit for the rice and extra for garnishing. heat 2 tablespoons of the oil in a wok or large coat the pan. Add the onion and toss until soft, 3-5 minutes add garlic and toss until fragrant and soft, 2 minutes. Add the ginger and toss for another minute. Add the remaining tablespoon of oil, then add the rice. Fry for 2-3 minutes then add the beans, tomatoes, and pineapple and fry 3 minutes more. Add the fish sauce and sugar and toss until ingredients are well combined and rice is heated thoroughly. about 5 minutes. Add the green onions and toss to combine.

I made a few changes again as I'm not really a big fish fan and used some of the Chicken marinade from the Injun Curry Chicken and did not add the Chinese beans and used normal rice and only half a teaspoon of Ginger as my Mom is not very crazy about Ginger in food. Ruben ate all his rice and asked for more, he just loves rice.

As you can see on the Injun Curry Chicken thread we really enjoyed our lunch.

We just made a nice plain tomato salad with (actully my Mom made the salad) and we had a very nice Sunday lunch.
Thanks! Actually, you could have substituted soy sauce for the fish sauce, Glad you all enjoyed it, it's one of my favorites! Rice is always yummy!
I'll try soy sauce next time, it's just that there were the Marinade and I did not want to waste it, usually I use it for the dogs with their pellets just heat it up a bit and pour it over, they just love the different taste sometimes.
Ok, I'm a little dense, what are you flavoring the dogs pellets with? the fish sauce? Soy Sauce? Curry??? LOL
i decided not to make a new thread .. as we already have one on this delicacy .. (i posted wingy on a new thread as it has alreasdy two of them .. and frankly .. wingy deservs it ..) .. so here it is .. and i m dropping the recipe as ursula already mentioned it ..

The cooking part was as usual I cant comment on properly as I was studying for an exam (I came 3rd on in .. ta da … must be partly because of a happy stomach .. so thank u grilldog) when it was cooked so u have to depend on second hand opinion here .. but she said it was easy .. I tell u something the smell was so tantalizing that it was hard to study as the kitchen and my study is separated by only a hall.. and all the time I was looking at DNA Cryptology notes all I was thinking was when she will call me for dinner !!! and by the time she called .. I was already swimming in my saliva (pardon my language) ..

The instructions was followed to the point this time except for the Chinese bean part .. Cant find it .. so normal beans were used.. it was cooked in rice oil .. and the pineapple came out of cold storage as it wasn’t time for pineapple then … the scallion was nice touch ..

the aroma was .. woh la la .. it only hinted at how its going to taste and as I write I can still remember it .. it was like spicy fried rice but with a little sweet aftertaste .. I mean … ok .. I have to say .. I have tasted a lot .. a lot a lot of rice preparations as rice is the main food here .. but this one was .. different .. it tasted a little like .. sweet rice .. but not exactly like it .. it would be wonderful for a dinner with guests .. as it takes not much time or effort to prepare .. except for cutting up the vegs etc .. and washing them .. and it tastes like its taken hours to prepare .. its wonderful .. thank u again ..
thanks mouri, yes the pineapple rice is a favorite of mine, I like to mix flavours and taunt people. I'm glad your stomach was so happy that it helped you get such a high score on your test! Congrats! I appreciate the review! Hopefully it didn't deter you from getting a #1 spot on your test LOL
Oh Grilldog, the Chicken Marinade that was left over, the dogs just loves it, any sauce or marinade that I usually have left over I give to the dogs, they go crazy as it is like an unexpected gift over their normal food.

Mouri I'm so glad you're back and also in the competition, You're great.

The rice was absolutely divine and I'm sure that whoever tries it will surely use it again as we are going to do.

This rice recipe was actually one of the lot that Ruben really loved.
